I've bought six of the seven Dr. Cow's cheeses - and only not the seventh because I am waiting for it to come back into stock -- I cannot wait!!! This cheese is, to my palate, simply superb. There is no wrong time, place, way to serve and enjoy it. I tend to love great cheese with fruit or tucked into pieces of celery, but whether you pair Dr. Cow's cheeses with grapes, cherry tomatoes, crackers, bagels, peaches or melon, your taste buds will thank you. Bravo to the cheese makers at Dr. Cow's! Kudos!
BEST VEGAN CHEESE EVER, so yes, it IS worth it

I cannot eat dairy and had accepted that, but wanted to try a vegan nut cheese that wasn't fake and processed. After scouring the Internet for reviews, I decided to try Dr. Cow and am so glad I did because this cheese is AMAZING!! I'm not totally sure how "real" cheese tastes, but I AM SURE that Dr. Cow IS PHENOMENAL. To me, the taste seems similar to fancy-schmancy cheese, but if you go in expecting exact cheese, you'll probably be disappointed because this obviously doesn't have the same ingredients as cheese (if you want something to taste exactly like cheese, go eat cheese). However, if you go in just wanting something delicious (that also happens to be both healthy and vegan), you aren't likely to be disappointed. I have only tried the cashew flavors (macadamia seems to be permanently out of stock), and I adore them. They are actually really pretty, too, especially the kale (which is green), blue-green algae (which is blue green, go figure), and the dulse (which has cool purple spots). The hemp and plain taste great too, just aren't as pretty. Somehow all of the flavors taste different but with the same core awesomeness. I haven't had the opportunity to try the brazil nut yet, but expect to love it. The cheese has a great consistency (smooth and somewhat creamy, not rubbery AT ALL), unlike many vegan cheeses. It gets quite soft if it sits out long, and is even pretty soft in the refrigerator. For me the consistency is perfect when I freeze it (usually cutting it up first because its harder to cut once frozen and I only need a little chunk to be full). Frozen, it can be too hard to eat initially. However, I sit out a chunk to thaw for 5 or less minutes, then it is PERFECT: still easy to bite into but not too soft so that it doesn't stay together.Additionally, unlike with the majority of "fake" cheese, the ingredients are ACTUAL FOOD and don't contain soy. Dr. Cow seems to truly care about creating quality food, considering they add probiotics to culture the cheese and even age it for 3 months. Dr. Cow touts this cheese as easily digestible, and I agree because even though I have digestive issues, I can actually eat this!!Yes, it is somewhat pricey, but I think it is totally worth it given the flavor and effort put into each cheese. (I even asked for it as a birthday present.) Also, the cheese is very nutrient-dense and you don't need to eat a whole wheel to be satisfied, a little slice is plenty!I do not like things that are very salty, and this was not too salty for me. It actually tastes saltier than it is, but this is in a good way. The flavor is tangy/savory rather than salty, which is awesome, but it is certainly not boring or bland. I highly recommend trying Dr. Cow if you are debating it. I am so glad I took the risk and bought it because they now have a customer for life.
Aged Cashew Nut was Lemony

Not a huge fan of the Aged Cashew. Compared with the other artisan vegan cheeses (Punk Rawk, Vegan Sun, Treeline), this one is my least favorite. The texture is pretty nice, but the balance in flavor isn't to my liking. It's a VERY fermented taste, heavy on the lemon too. I'm still interested in trying the other but combos to see if the balance changes (could have been just my batch and I always give brands a second try).

I've had ALL the cheese substitutes and Dr. Cow's is the only one that comes close. I've fed this to my non-vegan friends and they couldn't tell the difference. This cheese won't melt but giving up real "phlegm" to keep mother's from being tortured and babies from being murdered is a small price to pay for doing what's ethically and morally right.

If you miss pungent cheese that goes great with crackers and wine, the cashew cheese would be the thing to try. It has an amazingly firm texture that I've never been able to replicate, and is very sharp. Mind you it doesn't taste like the cheese you had in your non-vegan days! It's still amazing.
