Don't believe ANY negative reviews you may read, here or anywhere else, because, unless you are an extremely negative and "picky, picky, picky" eater, I believe you will agree with me that this is more like "the real thing" than ANY OTHER PRODUCT on the market. OF COURSE, it is not EXACTLY like real parmesan, but it is FAR MORE "REMINISCENT" than ALL the other vegan parms out there...(and I've tried ALL of them!). It gives ANY recipe which calls for some of that unique "funky" grated parmesan cheesy flavor, which is MUCH more "authentic"! (That's especially true with the Italian dishes, but not exclusively!) I'm writing a "comfort food" plant-based cookbook and using it has taken MANY of my recipes from "really good" to "SPECTACULAR", including my lasagna, my "chicken" Parmigiana, my stuffed shells, my "cheese" ravioli, my Italian meatballs, etc., as well as several soups. salads and dips. It also really adds a lot of authentic flavor just sprinkling on spaghetti, chili, burgers, whatever. Again, it is NOT real dairy Parmesan, so you can't expect it to be JUST like the real thing, but it's absolutely wonderful and if the manufacturer EVER stop making it, I will NEVER forgive them! I've bought it by the case for years and hope to continue doing so for years to come!

Amazing that everyone in my household eats this cheese (I'm the only vegan). It has the look, smell and taste of traditional dairy parmesan. I've used it cold as a topper for salad and pasta and also cooked with it. Just wish it came in a larger size.

I am very picky about taste especially with vegan cheeses because I miss cheese. Vegan cheese pretty much never tastes like the real thing. This tastes EXACTLY like Parmesan.

Maybe I got a bad batch, but based on reviews, I looked forward to trying but found the flavor to be a little bit bad and not like a Parmesan. I usually use Parmela (also offered here on VE) because it's cultured, and tastes like real cheese. I didn't even bother finishing the Galaxy Foods. Too artificial.
