I use this all the time as scrambled eggs. I'm not looking for something that exactly replaces eggs, just another vegan option. In that, the Vegan Egg exceeds my expectations. I don't really bake, but will try it in baked goods at some point.

The key to these is to season well before you put in the water and mix in a blender. We make veggie omelettes with hot giardiniera. Pour the eggs in a hot pan with a little olive oil let cook, flip and add ingredients. Fold and enjoy. We always cook them with veggies or fake bacon. Really works out better this way.

Wanted to post a review since the previous review would have made me not want to try this product if I had seen it before buying the FYH Vegan Egg. I haven't had any trouble at all mixing this powder with water. Just use very cold water, use the amount listed in the directions on the package, and it whisks right up with a fork, no blender or excessive stirring is needed. I never liked runny eggs either and I have no problem getting this "egg" to cook up into a pretty dry scrambled egg-like texture. Just turn the heat up on the burner and let the mixture sit still for a bit so it can start to brown and firm up, then break it up with a spatula and continue cooking for as long as you like. It definitely takes longer to scramble than a real egg, but really it's not difficult at all. I've had it scrambled with s&p, added it to fried rice, made breakfast sandwiches with fakin bacon, and I really want to try to make a quiche with it sometime soon. Like another reviewer mentioned, the only downside is the lack of protein so I think I'll try the tip to add pea protein. I love tofu scramble but this is a nice change of pace to experiment with in the kitchen, and really comes out better than I would have expected!

The first time I used it, what an effort to mix the water with the powder! Even though I probably didn't use enough water it came out pretty good. (as I found out later) Since the second time I saved my time & energy, put it in the little blender with a little more water & it was HORRIBLE! I really hate even my regular eggs runny but at least I can fix them, just cook them more-these I could not save for anything...no amount of cooking made them dryer in the middle, still watery & that was IT for me. It really hurt my arms to stir so much the first time so I guess I won't be using these again-too expensive & just can't afford it in all these ways.
