This didn't have that signature "brie" flavor, but I think this would be awesome baked in a puff pastry. On it's own, the flavor is amazing. It's definitely on the sweeter side. I enjoyed this on some crackers. It's also great paired with Vtopian's lavender cheese.

I tried this brie raw, but I didn't think it tasted like brie if I'm honest. However, I bought it to make a brie-fig jam-pastry for my boyfriend to comfort him. It came out perfect. He said the only thing that tasted different from the one his mom used to make him was the lack of bitter taste that comes from the crust. I personally thought it tasted like the cheese in a coffee cake. So, I recommend that this brie be used for cooking pastries, such as a coffee cake or brie fig pastry because it is 10/10 the best cheese I've found for pastries.
